- Prepare of cake.
- You need 6 oz of margarine.
- Prepare 6 oz of caster sugar.
- Prepare 6 oz of self raising flour.
- Prepare 2 medium of eggs.
- It's of filling.
- Prepare 250 ml of double cream.
- You need 4 tbsp of jam (any flavour).
- It's 1/2 tbsp of sugar.
- You need 1 of icing sugar to dust.
Victoria Sandwich instructions
- Preheat oven at 220°C.
- Grease two 7 inch sandwich tins with a little butter.
- Mix the sugar and margarine together with a wooden spoon until light and fluffy.
- In a separate bowl whisk the 2 eggs then beat this into the sugar/margarine mixture a little at a time.
- Sift the flour into the mixture and fold in.
- Divide the cake mixture evenly into the two sandwich tins and bake in the oven for 25 mins.
- Leave to cool for a few mins then turn out onto a wire rack and leave to cool completely.
- Whisk the cream with a little sugar.
- Spread the jam onto one cake and cream on the other.
- Carefully place one side on top of the other to create the sandwich.
- Dust with a little icing sugar and tuck in!.
