- Wash and wipe ladyfingers well.trim ends of each bhindi and cut them into to halves.(lengthwise)..
- Peel the skin of Onion's and slit them in Cross. (Do not cut completely at the end).
- In a blender jar add garlic, green chillies and ginger (I have added some fresh garlic too, it's optional) and give it a spin add remaining all spices and again blend for few secs. blend coarsely.(do not make paste)..
- Heat a wok/pan,heat oil,add blended garlic masala stir continuously on low flame for a min.add tomatoes and salt,stir well, (add Little water if required) cover it and cook for a min.or until mushy.stir well add potatoes and saute them well.add little water so the masala won't stick to the bottom.let cook the potatoes until half cooked.add Onions and saute well and cook for a min.add bhindi and mix carefully.cover it and let the vegetables cook completely till all the water evaporates..
