Chole Bhature step by step
- In a bowl mix together all purpose flour(maida), semolina (rava), salt, sugar and baking powder. Make a slightly stiff dough like we make for a poori. Note : (Don't Add Water As Curd Already Contains Water).
- Cover the dough and keep it aside for rising for 1 hour or more. After 1 hour the bhatiya dough will be ready. Knead the dough again and make small sized balls out of it.
- Dust the dough ball with all purpose flour (maida) and roll it out into thin circular shaped puri.
- Heat Oil In Kadai and maida puri, fry both sides of puri until golden brown. Once fried remove them from oil and serve with hot chole. Note : (Don't Add Too Many Maida Puri In Kadai At One Time).
- For Making Chole: Soak Chick Peas a night before (Wash And Soak Chick Peas Overnight).
- Add Chick Peas to a pressure cooker then add salt and water. Pressure cook them for nearly 15 minutes or until chick peas (chole) are soft and tender. Keep Aside.
- In a Grinder add ginger, garlic, tomatoes, fresh coriander leaves, green chillies and grind it into a fine paste.
- Heat oil our ghee in a pan and add bay leaf, cumin seeds, chopped onion. Once there onion turns golden brown in colour add the grinded paste.
- Now add turmeric powder, red chilli powder, chole masala, salt to taste aage saute all the contents in pan for 2 minutes..
- Then add cooked chick peas(chole) and mix well.
- Add some water and stir well for 5 to 10 minutes.
