- You need 2 cups of basmati rice ( soaked and half cooked.
- It's 2 cups of half boiled vegiees of choice (beans carrot potato peas).
- You need 2 of big onions sliced and deep fired to golden brown.
- You need 1/2 cup of Curd.
- Prepare 2 of Bay leaves.
- It's 4 of Cloves.
- You need 2 of Cinnamon stick.
- It's 3 of Green elaichi.
- Prepare 1 of Star anise.
- Prepare 1 tsp of Jeera.
- Prepare 2 tbsp of Ghee.
- It's 1 tsp of Kewra essence.
- It's 1 tbsp of Ginger garlic paste.
- It's 1 tsp of Haldi.
- You need 1 tbsp of Red chilli powder.
- It's 1 cup of Dhaniya and pudina.
- You need of Cashews nuts hand ful.
- Prepare 2 tbsp of Kismiss.
- You need 1 tsp of Lemon juice.
- It's to taste of Salt according.
- It's 2 of Green chillies.
Veg Handi instructions
- Take a bowl and mix the half boiled vegiees with curd dhaniya pudina haldi red chilli powder ginger garlic paste green chillies salt and half quantity of fried onions with 1/2 spoon ghee and lemon juice and keep aside for 15mins.
- Take a pan add little ghee heat it add all the khada masalas like cloves cinnamon elaichi bay leaves and to it add the mixture of vegetables.
- To this layer of rice add little dhaniya pudina green chilli and ghee fried onions cashews and kismiss.
- On top of this add the half boiled rice and last finish layer with repeat dhaniya pudina green chillies fried onions cashews kismiss and ghee.
- Before covering sprinkle a little kewra essence and cook it covered for 10 to 15 mins on low flame.
- Serve hot with raita.
- Recipe for raita take 1 cup curd and beat it well to it add a little milk mix and add chopped onions tomatoes salt jeera powder and black pepper with little fresh coriander leaves.
